SIMPLE SOUPS- Carrot & Lentil

Easy Peasy Carrot & Lentil Soup

Ingredients:

As always I dont measure quantities- use equal parts veggies & lentils and enough stock to cover.




Carrots
Celery
Onion
Garlic
Chopped tomatoes
Lentils
Veg Stock








Method:
Rinse Lentils in cold water
Chop veggies
Add everything to pot of stock and simmer until veggies are cooked.
Eat chunky, or mash with spud masher, or blend.

YUM!
